One of my favorite things about Haute Stacker is the versatility in the design options. In this doughnut/cake tower, I was able to create a dramatic cake and floral display with very few cake decorating skills. The top and bottom stacker plates are filled with fresh flowers instead of cakes to compliment and frame the cake tower.
The individual cakes were made using a doughnut baking pan...this one was from Wilton. Frosting the center and then applying a crumb coat allows for a perfect surface to decorate. Nearly any cake recipe works great with this doughnut baking pan...I used a spice cake recipe.
Using an apple corer, I punched out a larger opening in the center...sometimes the cake batter spills over the center of the doughnut mold.
There's no need to worry much about applying an even crumb coat with this design. As long as the cakes (doughnuts) end up more or less straight, the next layer of frosting swirls will be even.
Using a piping tip with a larger, round opening, I simply created swirls, starting from the outside and working inward. You could swap out for almost any other tip to create a more elaborate design...either way, this is super easy to create. I finished the top and bottom with candy details, using white sixlets, which are available at almost any grocery store now.
I just used store-bought canned white frosting and food coloring to create this beautiful blue ombre effect. Before piping swirly rosettes on each cake, I simply added a few drops of blue food coloring to the frosting until I achieved the desired color intensity.
I found these flowers at my grocery store also. Originally, I only used the white flowers, but ultimately felt that the little red roses were a nice colorful touch.
The finished cake doughnut tower is so beautiful...and it was truly very simply to decorate and assemble. Each stacker plate can easily be used as a serving plate and then washed safely in a dishwasher or by hand. The uses for such a display are many...weddings, wedding showers, baby showers, birthdays, anniversaries, work-related celebration...the list goes on...
I think it would be pretty to a create several in this theme, but using several different colors to create a variety of ombre-effect cake towers.
